Classic Tiramisu

The dessert I am asked for most. No baking, just patience while it sets.

If I had to choose one dessert to make for the rest of my life, it might well be this one. Tiramisu is the pudding I am asked for most, and it is also one of the easiest, because there is no baking at all.

The only real ingredient you need is patience. Once the layers of coffee-soaked ladyfingers and mascarpone cream are assembled, the tiramisu needs at least six hours in the fridge to set and for the flavours to come together. Overnight is even better.

Why this recipe works

  • Light, not heavy. Whisked egg whites folded through the mascarpone keep it airy.
  • Make-ahead friendly. It actually improves after a night in the fridge.
  • Easy to scale. Make one large dish or individual glasses.

A few tips

Make the coffee strong and let it cool completely before dipping. Warm coffee will make the ladyfingers fall apart.

Dip each ladyfinger for just a second on each side. They will continue to soften as the tiramisu sets, so a quick dip is all they need.

Dust with cocoa just before serving rather than the night before, so it stays dry and velvety on top.

Classic Tiramisu

Coffee-soaked ladyfingers layered with a light mascarpone cream and dusted with cocoa.

Ingredients

  • 1 cup strong coffee, cooled
  • 2 tbsp coffee liqueur (optional)
  • 3 large eggs, separated
  • 1/3 cup superfine sugar
  • 18 oz mascarpone (about 2 1/4 cups)
  • 7 oz ladyfingers (about 24)
  • Unsweetened cocoa powder, to dust

Method

  1. Whisk the yolks and sugar until pale, then beat in the mascarpone.
  2. Whisk the whites to soft peaks and fold through.
  3. Dip the ladyfingers quickly in the coffee and layer with the cream.
  4. Chill for at least 6 hours, then dust with cocoa.

Notes

  • Dip the ladyfingers for just a second so they stay soft rather than soggy.
